The oven itself was cast in Italy, and
it was assembled in Colorado on a custom-built trailer. The hearth
is 43” in diameter, and can cook 75-100 personal-sized pizzas in an
hour. The cooking temperature is about 800 degrees, and most pizzas
will cook in about 90 seconds, typically needing to be turned once
for even cooking.
We burn dry hardwood, usually locally-harvested oak, for a hot fire that produces very little
smoke. The oven takes about an hour to come to pizza temperature,
and can stay there indefinitely with a steady supply of wood and some
TLC. The pizzas are cooked by 3 types of heat: conducted heat from
the hearth, convection heat from the hot air in the oven, and radiant
heat from the flame. Keeping all 3 types of heat in balance is
critical to properly cooked pizza.
