Mobile Wood-fired Pizza

Catering • Workshops • Festivals

We make pizza in the Neapolitan style.  This is a thin crust style that is cooked directly on the brick floor of the oven.  We top it with a wide variety of ingredients, most of them produced locally.  The result is a hand-made, fresh-baked pizza that you will love.

Neapolitan pizza is at its heart a bread product—the toppings are a garnish atop very high quality bread.  This is a bit different from what many of us are familiar with, where the crust is a vehicle for getting cheese into your mouth.

Ever seen a plate of pizza "bones"—un-eaten crusts that nobody wants because they're tasteless hunks of starch?  Our crust is better than the bread made in most bakeries, so we'll have everyone fighting over the bones like a bunch of junkyard dogs.

Toppings are applied with a light hand.  The key to great flavor is balance, and over-doing any one element can spoil a pizza.  We can recommend combinations based on experience and tradition, and we're always happy to talk with you about creating new combinations.  Perhaps we can introduce you to a new favorite. . .

Pizza Varieties

There are as many pizza topping combinations as there are people in this world.  We are happy to work with you to customize what will be available at your event.

Here are some of our most popular pizzas:

Margherita: fresh tomato sauce, olive oil, basil, fresh mozzarella

Viola: olive oil, tomato sauce, sliced garlic, oregano, tradionally made with no cheese (Jen's favorite!)

Bianca: olive oil, garlic salt, farmer cheese, rosemary, parmagiano (Evie's favorite)

Otter Creek: olive oil, tomato sauce, pepperoni, farmer cheese, parmagiano (Scott's favorite)

In season: a delicious combo of whatever the farmers' markets have in abundance!
